For this week's vegetarian hand pie, fresh mushrooms are sauteed with barley and garlic, then combined with goat cheese to give this hand pie an interesting and satisfying flavor combination. Each pie is a single serving and comes with a small veggie side. These are perfect for lunch or dinner (or breakfast?!) and they freeze well too - get a couple extras to have on hand in the freezer!
